JUST PLAIN CHEESECAKE Graham Cracker Crust 20 Graham Crackers-1package 1/2 Cup Sugar 1 Stick Butter or Margarine, melted Topping 2 Cups Sour Cream 2 Tbls. Sugar 2 tsp. Vanilla Filling 4 8 oz Packages Cream Cheese 4 Eggs 2 Tbls. Vanilla 1 Cup Sugar Crust: Prepare graham cracker crust by putting all ingredients in food processor until fine crumbs are formed. Press into bottom of spring form pan. Bake 10 minutes at 350' . Cool for 15 minutes. Filling: Cream together 32 oz. cream cheese and 1 cup sugar. Add 2 Tbls. vanilla and then the 4 eggs, one at a time. Pour over cooled crust. Bak4e 375' for 35 minutes. Center will still be a bit wiggly. Remove from oven and top with mixture of 2 cups sour cream, 2 Tbls. sugar and 2 tsp. vanilla. Bake at 450' for 10 minutes (I sometimes cut the time down to 7 minutes so the topping is a little creamier.) Cool and chill at least 2 hours or overnight.
