Overview
Enchiladas [Tofu, Chicken, etc] [use with enchilada-sauce.txt and nutritional-yeast-cheese.txt recipes] 2 large onions, chopped 1 or 2 green peppers, chopped 1/4 cup oil 1-1/2 c tofu, mashed or 2 chicken breasts Salt and pepper to taste 1 tablesppon chili powder (or more to taste) 1 can black olives, chopped 12 tortillas 1-1/2 cup corn 1-1/2 cup Enchilada Sauce (Recipe included in directory) 1 cup cheddar cheese grated or Nutricheese (Recipe included in directory) Chop vegetables and saute in oil til onions are clear Add tofu, pepper, salt, chili powder to the sauteed veggies And continue cooking and stirring until tofu is dry. (Substitute tofu with chicken if you want) Remove from heat Stir in olives and corn Soften tortillas by wrapping in paper towels and microwave on high for 5-15 seconds Fill tortillas with 3 tablespoon mix and roll up Arrange side by side, touching in a 10x13 inch pan Top with Enchilada sauce and cheese or Nutri-cheese Bake 350 oven for about 15-20 minutes until heated through
