Cheesy Crumb Potatoes http://www.central-market.com/recipe/recipe.php?recID=754 Serves 4 2 1/2 lbs. red potatoes, cut into 1-inch cubes 2 T bread crumbs 1 tsp olive oil 1 C shredded low-fat Jarlsberg cheese, divided 1/2 C reduced sodium chicken broth 1 T chopped fresh parsley Preheat oven to 400 F. In a large saucepan, combine potatoes and enough water to cover. Bring to a boil over high heat; reduce heat to medium and cook until potatoes are tender, about 10 minutes. Drain. In a small bowl, combine bread crumbs and oil. Mix well. Spray a 1-qt casserole with vegetable cooking spray. Place half the potaoes in prepared casserole. Sprinkle with 1/2 C cheese. Top with remaining potaotes and cheese. Pour broth over potatoes. Sprinkle bread crumbs mixture over top. Bake until casserole is heated through and top is golden, about 20-25 minutes. Sprinkle parsley over top. Serve immediately.
