Chili - Your Kids Will LOVE Laura's Recipe 3/4 lb. ground beef 1/2 chorizo or italian sausage 4 cloves of garlic, minced 1 large sweet onion, diced 1 can (28 oz.) diced tomatoes with chili peppers 2 can stewed tomatoes 1 c. broth 1 can (15 oz.) pinto or black beans or chili beans, rinsed, drained 1 (15 ounce) can kidney beans with liquid 1 can corn 1 tsp. ground cumin (or to taste) 1 tsp. chili powder Salt and Pepper Lime juice, to taste optional 2 c. butternut or banana squash, diced 1 medium sweet potato, peeled, diced kidney beans Cooking Heat a large stock pot over medium heat. Crumble the ground beef into the hot pan and cook until evenly browned. Add the garlic, onion, jalapenos, yellow and green peppers, carrots, squash, sweet potato, broth, tomatoes, beans, cumin, chili powder, salt and pepper. Simmer over low heat for at least two hours, stirring occasionally. After two hours, taste and adjust spices as needed. Add lime juice to brighten the flavors. Serve with fresh lime wedges, cheese, or parsley and a dab of sour cream. *Cooking Customizations* Crock pot 2-3 hours, or longer Low heat
