Walnut-Crusted Sea Bass Serves 4 4 (6 ounce) sea bass fillets, skin removed 2 slices whole wheat sandwich bread, crusts removed 2/3 cup walnut pieces 2 tablespoons unsalted butter, melted 2 tablespoons whole grain Dijon mustard 1/4 cup finely grated Parmesan cheese 2 tablespoons minced fresh parsley 4 teaspoons mayonnaise Lemon wedges Preheat oven to 350°F. Tear bread into pieces and place in work bowl of food processor with walnuts. Pulse to form fine crumbs. In a mixing bowl, stir together crumbs, butter, mustard, Parmesan and parsley. Pat fish dry with paper towels and season with salt and pepper. Line a baking sheet with foil and coat with non-stick cooking spray. Place fish on prepared sheet. Spread 1 teaspoon of mayonnaise onto top of each fillet. Divide breadcrumb mixture evenly and press onto tops of fillets. Bake for 15-25 minutes, or until fish is cooked through (cooking time varies depending on thickness of fillets). If necessary, turn broiler on high for last 1-2 minutes of cooking to brown crust. Serve hot with lemon wedges.
