Overview
Chicken and Brocolli Stir Fry Serve with rice 1 bunch brocolli 1 sweet red pepper 2 large green onions 3 boneless skinless chicken breasts 1/2 cup chicken stock 2 tbsp soy sauce 1 tbsp corn starch 1 tbsp oyster sauce 1 tbsp dry sherry 1 tsp sesame oil 1/4 tsp Asian chili paste (optional) 3 tbsp vegetable oil 2 cloves garlic, minced 1 tbsp minced ginger root 1/4 cup ++ cashew nuts 1. Dice broccoli, red pepper, green onions & chicken. 2. Whisk together 1/2cup stock, soy sauce, cornstarch, oyster sauce, sherry, sesame oil and chili paste. Set aside. 3. Heat wok over high heat until drop of water sizzle in steam. Pour 1/2 the oil, and swirl in wok evenly for ~ 30 sec until hot. 4. Add half the chicken. Stir fry 3-4 minutes until chicken is no longer pink inside. Transfer to plate. Repeat for remaining chicken. 5. Add remaining oil to wok, stir fry ginger & garlic for 10 seconds, or until fragrant. Add broccolli and red pepper, stir fry for 1 minute. Add onions, stir fry for 30 seconds. Pour in remining 1/4 cup stock, cover & steam for 2 minutes, stirring once. 6. Return chicken to wok. Push contenst to side, and pour soy mixture into center of wok. Cook, stirring, for 1-2 minutes for until thickened. Stir chicken & vegetables to coat. Add cashews. Serve immediately.
