Coconut Ice Cream http://www.bellaonline.com/articles/art34344.asp This recipe will work well with any electric counter top ice cream maker. 1 can (15-oz) cream of coconut 1-1/2 cups whipping cream 1 cup milk 1 cup (packed tightly) flaked coconut Mix the cream of coconut, whipping cream, and milk together until well blended. Stir in the coconut. Pour the mixture into the ice cream maker and freeze according to manufacturer's directions. The ice cream will be soft and creamy, about the consistency of soft serve ice cream. For firmer ice cream, spoon it into a freezer container, cover, and place it in the freezer for about 3 hours. For easy scooping, remove the ice cream from the freezer about 10 minutes before serving.
