Overview

Avgolemono - Greek Lemon soup (recipezaar #106594) 4 servings 40 minutes 10 mins prep 6 cups chicken broth 1/3 cup long grain rice (1/2-3/4) 3 eggs 1 lemon, juice of (or ~ 1/4 cup lemon juice) Boil broth. Add rice and simmer, partially covered, for 20 minutes. (less time if you use instant rice). Beat eggs until frothy. Slowly add lemon juice. Add 1 cup of hot broth to the egg mixture, drop by drop, while continuously beating. (this method prevents the egg from coagulating in the hot soup). Remove soup from heat. Add egg/lemon sauce to soup and stir to combine. (The egg will instantly cook in the hot broth.)
