Banana Peanut Butter Loaf http://seattletimes.nwsource.com/html/foodwine/2003604716_bread07.html Makes one 9-by-5-inch loaf 6 tablespoons (3/4 stick) butter 1/3 cup crunchy peanut butter 1 cup granulated sugar 2 eggs 3 bananas, sliced (about 2 cups) 1 teaspoon baking soda 2 cups all-purpose flour 1/4 teaspoon salt 1/4 cup chopped salted peanuts Grease a 9-inch by 5-inch loaf pan and set aside. Cream the butter and peanut butter together with the sugar. Mix in eggs, bananas, soda, flour, salt and nuts; pour into greased pan. Place in a cold oven. Set oven to 300 degrees and cook for about 1 1/2 hours, or until loaf tests done. Cool for 5 minutes in pan on a rack, then unmold and let cool completely, right side up.
